Romano Beans

I can hardly wait each year for romano beans to come into season! Romano beans have light green, broad, smooth, flat pods with small beans inside. They are sometimes referred to as Italian beans.

I buy them fresh, slice the ends off the pods and cut them into a few pieces. I saute some shallots or onions in olive oil, add a little garlic, then the beans and cook for a couple of minutes. I then add some fresh chopped tomatoes, put a lid on the pan and simmer on low heat for about 30 minutes. I add sea salt before serving.   The result is so tasty!
